New To Cider Making - Looking for Recipe Similar to Downeast

I'm going to have to give Downeast a try - maybe even visit! Right down the street from where I used to work. I like the lineup, my next brew is going to be with cranberries. Anyway, I came here to learn, thinking I could duplicate Citizen Cider after a trip to VT. Then I went to Angry...

    Caramel Apple Hard Cider

Didn't clear but I like it this way for the caramel appeal. Testing the new site with a pic..... Weird, my other post is still awaiting mod approval.o_O

    love2brew.com

I agree 100%! Sad to see Paterson location go. I may have to use the website but the knowledge at the store will get me to travel to Brunswick when I can. Mark is great - avid cider maker.

    Is this cyser finished?

Wow, I don't know how I missed that thread! Fantastic. Wait til my GF sees me making this. Homemade stir plate, growing yeast, and now.... a pressure monitor. This will put her over the edge thinking I've lost it! :ban: Thanks Maylar and Scrumpy!!:mug:

    Is this cyser finished?

I'm finding the hardest part is determining the carb level with the 'test' plastic bottle. I'm surprised there's no pressure gauge being sold at brew shops for this purpose. I may build one. Oh, and I heated the bottles in the pot up to 155F then heat off, rest for 10min and then removed to...

    Cider Yeast Selection

UV pasteurized. But I had one go wild on me last month from a different orchard that was UV pasteurized so I'm not sure I trust it. Will have to look into this.

    Cider Yeast Selection

I just had to go check on my first 2 gallons w/ 775 after seeing this. Started 11/3, OG 1.042. Temps 68-70F. I just tested now - day 6 - 0.996. Cider from the orchard, clearing out nicely already. Sweet apple taste - I am amazed. What a difference from champagne yeast! I'm going to...

    Carbonation issues

If those are the same swing top Ikea bottles I own, I would not carbonate in them. I don't think they are meant to handle pressure. Also, your lack of carbonation might be from not getting a good seal at the closure. If you can't get glass meant for carbonated beverages you may be better...

    Cider Yeast Selection

I visited Angry Orchard yesterday, after the tour I asked what yeast they use - it's a secret...;) I'm fermenting to the end and bottle carbing as well. Will soon be trying bottle pasteurizing to retain some sweet as well. I've only done a few batches with premier blanc but have to give...

    first time screw up?

I'd like to go for 6mo but if I make it to 3 I think I'll be happy. I just picked up the WL775 and 4 gallons of fresh cider and that is going to get tucked away for the longer duration. I'm trying to break up the long wait with some faster single gallon batches like Caramel Apple and Turbo...

    first time screw up?

I have the same issue - used Premier Blanc for my first ciders - bleh. Maybe would have been better if I had stopped the ferment at some point....went down to .993 - no flavor, and lots of alcohol. The ones I bottled were only in secondary for a few weeks. I have a few more single gallons...

Is my fresh pressed cider 'bad'??

Just to update - this stuff was horrible - I cant describe the taste...vinegary and ?? Tasted when I went to rack after activity seemed to stop and FG 1.000. Bleh - poured right down the sink. Won't try that again!

Optimum chill time for bottle carbed cider?

My patience lasted @6hrs before I had to try it. Quite a disappointment but I kind of expected it. Almost no carbonation after 4 weeks bottled @70F which was a surprise. (1oz priming sugar added/gal) The champagne yeast I used chewed up all the sweet plus any flavor.... Not sure if aging in...

Optimum chill time for bottle carbed cider?

Curious if there is a minimum amount of time to chill my cider in the fridge before cracking it open. Also, will taste improve if chilled for a longer duration? I'm growing impatient and have been known to put a warm beer in the freezer for a quick chill to drink. I don't think I want to...

Is my fresh pressed cider 'bad'??

I wish I had room in the freezer, great idea. The larger carboys are already on the shopping list though! I think I'm going to need a bigger apartment...:D

Is my fresh pressed cider 'bad'??

OK cool - so at least it's worth a shot! I wanted to try a natural yeast ferment at some point so this has forced me to at least try it. The more I read, the more a realize what you said. I have 9 - 1 gallons going now spread over 2 months, more on the way. Basic plan is 3 week ferment, 4...
