what to call "ciders" made from fruit other than apples

Wells makes Banana Bread Beer. 5.2% I think it's delicious. Also heard 1/2 Banana 1/2 Youngs Double Chocolate Stout is good. I know the Ocean Mist in Matunuck RI has the Banana Bread on tap, only because I go there quite often.:cask:

Don’t judge...best I can do within walking distance. Way too sweet for my taste. :cask:

Wow, that went down to 48 orders until shipping pretty quickly!

    Pressure to carb ratio?

Mine are pressurizing really fast in comparison. Especially the caramel apple, that had a lot of extra sugar and no secondary. Might just need more time to absorb that co2. I know my standard primed bottles take @4 weeks to carb up so that gives plenty of time to get the co2 into solution...

    1st 2018 Cider

All new. Based on conversation in the yeast selection thread. Trying to see if there's much difference and what I might prefer. Was tough to decide. Had to get at least one wine yeast in there. Most excited about the fresh apples - that was unexpected and S-33 got cut from the team.;)

    Pressure to carb ratio?

That sounds the same as mine, when I chilled the tester. I'll split my new batch up and pasteurize half at 25 and experiment with the others to see if there's a difference in carb. It's only 10-12oz's from a gallon batch. Already 8psi since bottling yesterday. :D Dave, how long do your...

    Pressure to carb ratio?

I just bottled another batch @1.006SG. Using the tester I might cycle warm/cold and watch what happens with the pressure. I'll see if I can get it to hold @25psi warm and cold after a few cycles. Similar to what bombo80 described with the carbonator cap but I'll use the yeast to do the work...

    1st 2018 Cider

I just picked up 5 gallons at the orchard yesterday. Waiting for the yeast I ordered to be delivered to get them going. I was surprised to see fresh apples still available. I grabbed 4 qts of Gold Rush. I couldn't resist. Going to run through my juicer and blend with one of the gallons I...

    Pressure to carb ratio?

This has me thinking......Say I take my tester that is at 25psi and chill it. The pressure drops - I'd assume the co2 went into solution. Or is that simply due to temperature changing the density of the air? If I take it out of the fridge to warm to allow the yeast to get active again, will...

    Cider Yeast Selection

Good point! I hadn't thought of that. I've just been growing the 775 with a little juice for 24-48 hrs on the stir plate. Nothing scientific. When the yeast appears to have doubled, I pitch half and store the other half for future use.

    WLP773 - Vault Cider Yeast!

Yup. Been waiting for this as well. Nordic blend too. It's just as well this is taking a while. I have enough varieties now to keep me busy for a few years......

    Pressure to carb ratio?

Caramel Apple took just 4 days to reach 26psi. Sat out for a week after pasteurizing, then another week in the fridge before enjoying. I still have a six pack chilled and will keep it for a month or more to see if that helps. Cranberry took 9 days to reach 24psi, (sweetened with only honey...

    Cider Yeast Selection

Nice! Looking forward to that 773 as well. If you build a stir plate you can just keep growing the stuff and store in the fridge. I have a shelf on the door of my fridge dedicated to yeast.

    Aging cider techniques

I was just going to post a similar question. I only do 1 gal batches. I have a few one gallons in aging. Would it age just as well in 12oz primed bottles? I'd really prefer to bottle and store a six pack from each gallon and hide it away for up to a year. Then I could drink the remaining...

    Pressure to carb ratio?

Cool. I had expected a bit more fizz at that pressure - like most commercial ciders. Do you think more or less headspace? More time chilled to absorb co2? All bottles turned out the same and were chilled from 7-10 days. I'm bottling my pumpkin chai this week. Might sweeten to 1.005 with...

    Pressure to carb ratio?

So I thought I had this figured out and pasteurized my bottles after achieving @26psi on the test bottle. After refrigerating for a week and cracking them open, got the pffft. Pouring into a glass I expected tiny bubbles rising in the glass indicating a medium or even sparkling carb. Not the...

How many gallons of cider in 2017

Looks like my last gallon for 2017....Whole Foods Organic (free glass carboy included) w/ 71B. Trying pectic enzyme and a bit of malic acid for the first time after testing TA. Total of 16 gallons for me this year (started October). Going to start first week of January with 5 gallons from the...
