    Aging cider - Time limitations?

Nothing looked 'off' - the cider was still hazy but appeared fine. Hijack away...it's all part of the conversation.:mug:

    Aging cider - Time limitations?

Oxygen was my first thought. But I'm pretty careful when transferring between carboys. I topped it right up into the neck of the carboy and sealed it up. Your question of racking has me wondering if I should have racked it a few more times? There was still a slight bit us sludge at the...

    Aging cider - Time limitations?

Yes. It was down to .998 after a week and I racked it at 2 weeks. Tasted slightly sweet, fruity but bland - lacking much flavor. I was hoping aging would bring back some of that. I didn't add anything else at racking. Wow, this was done faster than I remember - before I started keeping...

    Aging cider - Time limitations?

I bring this up because I just dumped 2 gal of my WLP775 cider down the sink after I was going to bottle. Tested both and it was sour, vinegary terrible. I was curious and did an acid test on it which came out .87% - ewwww. Now these were pitched back in early November and I had stored them...

    The "wow" factor

Glad to see this as well. I just picked up 6# of local honey today and am ready to start 2 gal BOMMs...tomorrow? Ingredients ready. Just doing a bit more research to make certain the procedures are correct. Funny when you find yourself driving over an hour into the country to find the 'good...

    Headache from cider

This is why I don't add sugar to my ciders anymore. I made some jet fuel fusel cider for my first batches and the hangover was painful. I've since just used unfiltered store or orchard juice, no added sugar and will usually try to keep the ferment temps down as low as I can. Hydrometers are a...

    Priming

This might help- https://www.brewersfriend.com/beer-priming-calculator/ I use 1.2oz corn sugar per gallon.

    Demijohn cider

Yeah I wouldn't add sugar. It'll up the ABV but you'll be making jet fuel. It wasn't a pleasant taste when I tried adding sugar. Straight juice should give you a good ABV of @5.5% and you'll preserve more of the flavor.

Perfect!! Although the sewing request might not get a good reaction here. Especially now that my brews are on display in the house like a trophy case! lol

Is total darkness really necessary? - bottled and secondary cider

Cool. Then I should be ok. Good tip on the hops - I'll be hopping a gallon this week. I'll make sure to keep that one covered.

Is total darkness really necessary? - bottled and secondary cider

My cidery has been evicted from the closet... I put all of my gallon carboys and bottles on racking out in a room. I hadn't considered my batches being exposed to light until now that I am admiring my gallons in secondary out on a shelf. Anyway, these are in a north facing room - no direct...

    Dry hopping?

Glad I saw this thread! The recipe in my Cider book says to add hops (3/4oz to 3 gallons cider) to secondary and store for 2 weeks at cool temps. I have Centennial and Cascade hops ready to go. Just trying to work out the timing the dry hop. Looks like less time would be best.

White Labs WLP773 from the vault

Yeah I got lazy and didn't cycle ice in my tote fermenter.... I was getting @60F with the ice. Not sure it was worth the hassle when I was doing it for the 8 degree reduction in temp.
