I use a stainless steel ruler to measure my water in HLT and also post and preboil. In my system 1 inch = 1 gallon.

After brewing this 2x I woould say it is a beer that needs to age a bit to mellow out. I think it is best at about the 2 month mark especially when dry hopping.

That looks great! I sometimes brew and use my smoker at the same time and this works well for me. I used to smoke briskets at a low temperature but have recently tried using a higher temp and I can get a brisket done in 6-7 hours unlike pork which is 12-16 hours for me.

I brew about 10 months out of the year as sitting outside in my garage in the winter is not much fun. I do however bring my mashtun inside when I brew. Don't worry the winter is only 8 months long!
