I need some help deciding if these local OxiCleans are apt for brewing.

OxiClean is essentially Sodium Carbonate and Hydrogen Peroxide. There are a number of 'Make your own for Cheap' blogs with recipes for making similar, and the commonly accepted recipe is 2 parts water, 1 part washing soda and 1 part Hydrogen Peroxide. If you can't get washing soda, it's also...

What To Request in a Water Report?

The problem with Annual Reports (as you note) is it's for the previous period, and measurements can swing significantly from period. Let me say first that I'm not a water expert, and only do minimal modifications too my own brewing water. That being said, you can send samples for analysis to...

    May have a situation

Also, it's probably the CO2 pressure that's pushing out the stopper. I've had blow offs that painted my ceiling and curtains with krausen--beer turned out great..as long as its active, it should be okay.

    New Kit

Difference is you get a 5gal kettle with Midwest, and 2 extra recipes from NB. While both are good kits, I think it comes down to the kettle; do you need a kettle and if so, are you okay with the 5gal kettle or prefer another one?

    Can I use them?!!

You can definitely use them, though consider a better washing than a quick rinse. I soak and clean them in a sink full of OxyClean (helps remove labels too), then into the dishwasher so I can get a high temp rinse/dry. A quick spray of StarSan around the lip while upside-down and they're ready...

    Pfeffernusse (Peppernut) ale for winter

There are many styles that would seem to work well, it depends on what you want out out of it. A saison is a nice choice, though I don't know if the yeast esters would compete or complement the spices. Maybe a saison base with English Ale yeast or possibly an amber ale base. Im assuming a low...
