Easiest way is 160-165 ohm for 3.3v logic and 245-450 ohm for 5v logic. Its important to make sure your transmitters are set to 0ma for faults instead of 22ma for faults as it can overvolt your board if you are at the upper end of the resistance range...

No, because the load in that instance is a contactor, not a heating element, and the wiring is protected by a 1amp fuse.

Yep, that's fine and all, but when you say you are still getting ~5v at 127 pwm, that makes me think your pot screws are set wrong. With pwm at 255, turn down the pot until you see some downward movement on your meter. Then try setting 127 and see if you get ~2.5v

I'm not familiar with Endress+Hauser, but many sensors with *newer* busses have a fallback to modbus. You might poke around the manual for your specific model and see if that is an option. If you can output modbus, I can help you get it into node-red and thus BC (if you have the correct license).
