    I make 5 gallon batches using a 10 gallon cooler. I preheat the mash tun with 2 gallons at 180 degrees. I haven't had the temp drop more than 1 degree over a 60 minute mash.

    I've never stirred, just pour it into the bottling bucket while it flows in from the fermenter. It's worked fine for me so far. You'll need to wait more than one week, I'd say 2-3 weeks before sampling.

    I preheat my mash tun with 2 gallons at 180 degrees. I leave it in while I hear the strike water, give it a good swirl then dump it and get started. Maybe give it a try.

    The elbow should not touch the cooler, and the rim of the false bottom should sit flat on the cooler. As mentioned there should be a barb at the bulkhead.
