    Apricot Pale Ale

Made up my own recipe for a Pale Ale but decided to throw some quartered apricots in a muslin bag for the last 10 minutes of the boil to extract some flavor and aroma. I've also heard to achieve this you can add the fruit in during the secondary fermentation? Any thoughts on either method? The...

Amount of water for starting boil.

Ok so the book I use as a guide for homebrewing calls for 4.5-5 gallons of water and bringing it to a boil then removing it from heat and adding LME/DME, hops, etc. But in other books they use half the amount of water and top off the carboy with cool water to reach the desired 5 gallon mark...

    Applying labels-best way?

I printed off some labels on my printer and applied a waterproofing/proctectant spray and am trying to figure a way to get em on the bottles. What's the best way? Glue? I read somewhere something about dipping the labels in milk? Anyone else heard of that? Any suggestions would be a big help...

    Pretty sure I'm effed...

yea I tried an ice bath but my pot couldn't fit in my sink so I freaked out and just covered it and put it outside in 25 degree weather. it still took foreverrrr to get down to around 75. I now have a giant tub like thing to put it in with ice water. hopefully this batch is still good!

    Liquid vs dry malt extract.

I don't plan on doing partial mashes for a while until I get a comfortable grip on everything. My next batch will however utilize DME, LME (added late), and steeped specialty grains. This is probably my best choice for a high quality beer at this point, correct?

    Partial grain/extract brews...

For my next batch I want to use extract but also grains through steeping. What malted grains can I steep? I read some you can and some (that need to be mashed which I don't know how to do or have the equipment for) can I steep? And also grains which can be steep need to be crushed, correct?

    Blow off system! Help!

What's the best way to do a blow off system-my head/kraussen is creeping up close to the air lock! I have an orange cap with two little neck things to put the air lock and a blow off tube into a bucket of water: should i just use the blow off tube and no airlock or use both?! QUICK! :) Thanks.

    Pretty sure I'm effed...

So its been about 24 hrs now and no bubbles or any signs of fermentation. Used White Labs 320 yeast. Pitched at about 75 degrees. Only worry was it took me a while to cool the wort. Almost 10 hours. Had it pretty well contained though. Are my lil yeast buddies dead?! Or am I just impatient...

    Liquid vs dry malt extract.

yea the two main concerns for me are freshness/quality of taste and an accurate color. from what I have gathered, it might be a toss up? but to get accurate color with LME I might have to start adding it late. is this not an issue with DME?
