That STC-1000 should do the trick. Put the probe in a low alcohol spirit and see if that works. Thats how i have mine set up in my Keezer. Love this build btw. very original! Cheers!

Just a guess, but I believe that was his concerns, that maybe the table would remove a lot of your heat from your kettles, thus making your system work less efficient.

I second the Greenlee punches. Definitely worth the money. Slices through like butta. I bought 3 sizes for a Kal clone build and very glad I did.
