    I dont see why not. If its not fully carbed though that pressure may go down so keep an eye on it. However, if you do add a new cartridge I wouldn't crank it up to 15. I would set it at your desired pressure and leave it otherwise you may overcarb it slightly.

    Chances are you are nearly out of CO2. If you want more carbonation youll have to depressurize and change out the canister. 12 psi @ 38° is spot on carb for most ales if it is equalized. You will still need to change it out once you start serving though or the pressure will drop with each pour.

    In my recent research the average startup brewery produces 5 gallons of wastewater to every gallon brewed. So your high for HB but pretty much inline with "commercial" standards ;) How are you chilling? Are you not factoring that into your totals?

    I use just L. Plantarum(1 cap/gallon) and co-pitch. It sours nicely, is very predictable and is extremely hop-intolerant. I have not had any sour "infections" of my normal ales and lagers using the same two carboys. Just a normal pbw wash after fermentation and a starsan soak prior to filling.

    With a kettle sour it is hard to determine how sour it is by taste. There is alot of sugar in your wort at this point and will mask the sourness.     Thats what I was thinking too. 10 psi is slightly overcarbed for your blend but I wouldn't think that would change the flow rate at the spout. For reference, whatever you set you beergas at you divide by four(25% CO2 Beergas) if you want to pre carb with straight CO2.
