So i think my beer is screwed

Well if you insist on clarity, you could always add gelatin to the carboy to get some of the haze to fall out of solution. I recently did that for a California Common that I'm entering into a BJCP, and it worked well. It has absolutely zero impact on flavor though, its simply for aesthetics...

So i think my beer is screwed

Ok first off, screwed is a harsh term. It sounds like, worst case scenario, you MAY have some haze and MAY have missed your target FG. Even if both are true, the beer can still taste really good. If this is your first batch, then I really wouldn't worry about the haze. If you're siphoning...

What hop to grow or buy in bulk

Centennial and Nugget. Nugget is great for bittering, and it has a good combination of earthy/spicy flavors that make it good for flavoring and aroma too.

Trying to make a label but suck at photoshop *sadface*

I'd bring Nessie in a bit, unless you're going for subtle. Depending on how much you want to play up the nessie thing, you could also add grain via a filter. I'd understand if you don't want that nice background ending up all grainy though.

first time cider / help with choice of juice

I am under the impression that pasteurized isn't too bad, so long as it doesn't have preservatives. I picked up five gallons from Mapleside in Brunswick, Ohio (its a bit of a haul for you), and fermentation seems to be doing fine after only 24 hours. Mapleside doesn't have any specific cider...

    Brewing with Nugget

Nugget is my favorite hop variety because it grows so abundantly in my backyard. Here's a recipe for a hoppy strong scotch ale that I've got going in the fermenter right now. I can't be sure about the alpha acids in the hops but I'd guess they're on the low side, so you may want to adjust if...
