Trash bags are often a bad idea. They are most likely not food safe and in some cases contain scents and/or anti microbial chemicals.

That certainly looks like stainless steel. I think you just have built up some residue from the heat/wort. If it bothers you some Bar Keepers Friend and some elbow grease will get that off.

Absolutely use it. You are essentially going to grow new scoby all the time anyway. All you need is the microorganisms to get things started.

Have you checked all your wiring connections? I used these connectors to the boards so I could pull things apart if needed. I often find I need to go in and wiggle them and press them in. My problem seems to be the temp sensor connection as that is what gets lost.
