    I've never understood the logic behind the trub dam. If you're using it with hops the hop material is going to flow behind the 'dam' and clog the pickup even with a whirlpool.

    Has the material had metallurgical testing done in the US? I think I've read these are 201 and not 304, correct? I'd suspect it's less of a passivization issue and more of an issue with chromium and nickel content.

    Why not just buy a regular stainless kettle for less money than that? It's overkill x10 to have a steam jacket kettle on that scale. And if/when something breaks it's going to cost $$$ to fix.

    If those are your two option then I'd go SS Brew (but that's just a standard pot with two holes punched in). Those welds are not very good. There isn't full penetration which caused voids. It's hard to tell but it doesn't look like it was back purged which will cause the area to by MUCH more...
