    Chasing an infection

Each time this has happened, there is a clear change in smell right around 2-3 days. And after that point, it never leaves. Before I went to bed the beer had a very typical saison-y/yeasty/almost sweet aroma coming from airlock. This morning it was completely different. The bad beers that are...

    Chasing an infection

No reason to apologize, I appreciate the input. My post failed to describe the cleaning process. I always do an oxiclean overnight soak in the buckets. Cleanup after brewing consists of a water rinse to get hop/break materials off of the stainless equipment. I will then splash it with star san...

    Chasing an infection

Fail. Woke up this morning and sniffed the airlock. Same smell. I cracked the lid and got a big whiff of the stank. So. What now? Does this mean I missed something or does this mean something is surviving my bleach and star san? I can do an all extract beer in my kettle to remove the brew bag...

    Chasing an infection

Thanks for the comments! I brewed today. Did a 3.5% session saison. Here was my procedure: Everything got taken apart, dunked in a bleach solution, rinsed several times, and then dunked in star san. This includes all stainless parts. It was a quick (2-3 minutes) soak in bleach. 1 Tbsp per five...

    Chasing an infection

Would RO work for this as well? I'm not sure I following what you mean tho. Are you saying mixing with tap water results in a less effective solution?

Stainless wort chiller. I have soaked it in bucket of star SAN prior to chilling and put it in boiling kettle for a few minutes. I usually stir fairly vigorously during chilling with my stainless spoon.

    Chasing an infection

Sorry for the delay. I have been traveling for work. Came home and checked the carboy with one of my first infected batches. First signs of a pellicle forming. So, a few things I intend to do before next brew: - Break down ball valve and sanitize interior of valve - Use new brew bag (mine has...

    Chasing an infection

I know there are several threads similar to this. I have spent hours reading threads trying to identify whats causing my infections. This last batch was my final attempt. I am out of ideas. I will detail my procedure/experiences.... - Have now had 4 infected batches in a row. Fermentation has...

    Any water adjustments?

New England IPA "Northeast" style IPA

I have brewed two different batches of this (one per the original recipe and then a session version with diff hops). However, I just recently got my hands on my first commercial version of this style. I got three different Hoof Hearted cans and was shocked at how sweet and almost vanilla-y each...

    Brewing on a Weeknight

Ditto. I did a 10 gallon batch in 2.5 hours. Got the main things cleaned and the rest soaking.

New England IPA "Northeast" style IPA

Are you using 1:1 on your citra/equinox? I have a pound of equinox that I have been scared to use in large dry hop quantities due to some folks saying it can be harsh.

    What are you drinking now?

I have a family member from Virginia that brings black ox to every family function. I am not a fan of most of their stuff. This porter seems like their best beer. I have tried to hint that they should bring some Aslin IPA's since they live in Herndon

    Omega All the Bretts Starter

I got my hands on Omega Yeast's All the Bretts. I do not regularly have access to liquid yeasts and have to order them. In the name of frugality, I am looking at how to best harvest this blend. I intend to co-pitch it in a saison during primary with WY3711. Can I make a larger starter with the...

New England IPA "Northeast" style IPA

I am planning to brew my first NE IPA in a few weeks. With the ease of my new ebiab system it's silly to not be brewing 10 gallon batches. Am I crazy for wanting to pitch some wyeast 3711 saison yeast and some Brett in the other five gallons? I figure the residual sweetness of this grain bill...

    E-BIAB... Is it worth it?

To further explain myself, switching to ebiab allowed home brewing to remain viable for me. Before we had kids, I could pull off 6 hour brew days in the garage, lugging equipment up and down basement steps, and checking temps regularly. It was "my" time. Well add a kid to the mix and this time...
