    To me those cooling curves for your reservoir seem just fine. The peaks are when its actually cooling a tank. And it seems like the AC unit is doing just fine catching up. If you want to see less swings in the reservoir then I suggest a larger tank for reserve.

    So my soon-to-be Father-In-Law heard about how good this stuff was from his wife when she was at the bridal shower. He called yesterday asking where he can pick up bottles for us to fill for him so he can have some. Guess we'll be brewing this a little more often now!

    This weekend is pear picking at my co-workers house. Looking to out-do my 11 gallons worth of cider from last year. If I don't with her tree I will with my grandparents tree! It actually produced fruit this year and is 3 times the size of my co-workers tree.

    Mine did this. However she takes part in all processes of the brewing process too. And it was because of her that i now have 5 more items on my list of "Upcoming Brews" She bought the kits.

    Except that increasing from 5-6 gallons is only a 20% increase. I increased the amount of lemon juice by 33% in total. Sent from a happy little yeastie.

    So I bottled mine over the weekend. I used all three bottles of the lemon during the original stages like the recipe calls for. After backsweetening and tasting It seemed like very watered down lemonade and added another half bottle of the lemon and a half bottle of lime. Still seemed very weak...

    I have been leaning towards just a natural ferment style pear cider since posting. I was just curious if anyone had used a fruit juice in place of water. Sent from a happy little yeastie.

    So I am looking to brew a lambic of some sort this fall. I haven't decided on what exactly to brew yet. However I am wondering if anyone has used a fruit juice base for the "water" of their sour? I will most likely be getting enough pears from a co-worker for between 10-12 gallons worth of juice...
