    Reliable Smoking Thermometers?

All I know is that I've got a couple racks of back ribs in the freezer calling to me and it's still too cold out to fire up the kettle grill... Global warming my a$$...

    Reliable Smoking Thermometers?

@Coontail - I just got an e-mail this morning from Thermoworks saying that open box versions of the Smoke unit are on sale for $76.00. Thought I would pass this along. Link...

    Reliable Smoking Thermometers?

I bought a Thermoworks 'Smoke' unit and I love that thing, I really like how the 'pit' probe clips on to the grill grate of my Weber charcoal grill.

What did I cook this weekend.....

I grew up in upstate NY by Lake Ontario, I know what spiedies are. Haven't had them in a long time but I do remember liking them.

    Bread not rising

I proof my bread in the microwave, not turned on of course. I put four coffee mugs full of very hot water from the tea kettle in there with the bread to increase the temperature and add humidity. I find that the small enclosed space helps with the temperature and humidity definitely helps the...

What did I cook this weekend.....

Actually the truth is I made her recite the ingredients and steps to me, and I wrote it all down because I want the exact same thing again sometime. Here's the thing. My wife can eat something like one spoonful of shrimp and grits at a really nice restaurant, and then two weeks or so later...

What did I cook this weekend.....

The wife made this 'Sherry Cherry Chicken' last night. I made the mashed taters. This was a slightly new variation of this dish that she normally makes without a recipe. This version was soooo good, I made her write it down because, damn!

What did I cook this weekend.....

Dude, we use coconut oil all the time. Anytime I'm sauteeing onions and other veggies, the wife uses spray coconut oil on the pan to bake french fries, spray on samosa and pakora when making indian food. Do a google search and you'll find it's excellent for you.

What did I cook this weekend.....

Well this wasn't really last weekend, it was before Christmas and I forgot that I took the pic. My first ever batch of homemade pecan chocolate chip cookies. They were really good for a first attempt.

What are you listening to (music!!!) right now? Embarrassing or not... share

Alpine Valley, June 6, 1985. Very enjoyable, would've been a great show to have seen in person. https://archive.org/details/gd1985-06-22.mtx.seamons.109561.flac16/gd85-06-22d2t08.flac

What did I cook this weekend.....

My wife's tradition for Christmas breakfast is Eggs Benedict, so gotta poach them eggs. We got some of those silicone egg poaching cups from some store or other a long time ago and they work great. The eggs do come out a little dome shapped but I'm fine with that, you don't lose any egg to the...

What did I cook this weekend.....

I have a whole pot rack full of Allclad SS and we love that stuff. If you don't already own some, I'm sure you'll love using them.

What did I cook this weekend.....

I'm tell you guys, these things are addictive. I added shredded Cabot extra sharp white cheddar cheese to this batch. We've eaten them with grilled steak served with Chef John's 'Bourbon Pepper Pan Sauce' (link below and btw if you watch his video, I'd never cook a steak in a pan on the stove...

What did I cook this weekend.....

You're most welcome. You think those are good? You need to try his potato puffs! I've made them 3 times so far since I found that recipe a month ago. I'v made one batch with some hand shredded extra sharp white cheddar cheese, and another batch with some hand shredded Gruyere cheese and, dude...
