    Confession Time

    Took another gravity reading, and she's holding steady at 1.021, putting my abv at 11.7%. I was hoping for an even 12, but I'm quite happy with how well the yeast attenuated. She's a barleywine for sure!

    Dry hop in secondary

    If you like fooling around with your beer like I do (and it's honestly a bad habit), then I wouldn't do a secondary until she's sat in the primary for 2 weeks.     I go at it more or less like an neanderthal. I put a sanitized strainer over the top of my bucket and pour it through. I've never had a stuck fermentation (knock on wood), and most importantly...it's simple.

    Unfortunately, you've been given some excellent advise, and time is probably your only chance of getting a mellower beer. The silver lining is that you can always brew another beer while you wait for this one to age out. The old line, "Mo money, mo problems" does NOT apply to beer.

    American Barleywine/Rum/Oak thing

    If you don't mind me asking...how much Rum did you use? I planned on putting 2 oz oak chips/16 oz rum, but now I'm thinking 4 oz oak chips/16 oz. rum. I know it's quite a bit of rum, but I'm looking for something that takes a while to tame, so why the hell not?

    American Barleywine/Rum/Oak thing

    Did you use the Rum from the oak chips, or did you just toss in the oak chips after soaking? I was gunna age this beast for a whole year, so I'm trying to go a little overboard on everything so it will have time to mellow...but still have a solid taste 365 days from now.
