    1-Gallon Brewers UNITE!

If I need to top off after siphoning freshly made wort to fermenter, do I use tap water or spring water?

I probably am not going to get to bottle at the three week mark like I wanted to. I am sick and probably won't feel like bottling. It will be more like four weeks out. Will this affect the conditioning? Again, I am brewing the Northern Brewer 1 gallon Irish red ale.

Oh. I thought priming is the two weeks immediately following bottling day while it is sitting in the same room I had it fermenting in. I thought conditioning is the next two weeks sitting in the fridge. Am I totally off?

Just got finished bottling my first ever brew! Got 21 bottles of classic American light. It was the 18th day from brew day. My very last bottle was quite cloudy. Will this clear up during priming?

    1-Gallon Brewers UNITE!

Just performed my first gravity reading. Didn't take an OG reading. Today is the 16th day since brew day. Brewing an Irish Red Ale. Gravity reading tonight was 1.006. Going to take one tomorrow and the next. If no change, will cold crash on Sunday and bottle on Monday. I bought a wine thief...

It is an attached garage. I do have the Star San in the airlock.

    1-Gallon Brewers UNITE!

Can I cold crash it in my non-insulated garage if the low for that night is 25 degrees? I plan on doing it this Sunday. Also, will cold crashing affect my priming? I had planned on priming for 2 weeks. Before cold crashing, should I take off the airlock and replace with a sanitized piece of foil...

Speaking of that, I am on my way to buy a hydrometer and have a brew. What is the best way to use a hydrometer on a 1 gallon batch without losing the sample? Can I just make sure the hydrometer and sample jar are sanitized and pour it back in?

Thanks, cheesecake! Just learned what cold crashing mean. Will it hurt to cold crash it on the 20th day and bottle on the 21st day?

    1-Gallon Brewers UNITE!

I am brewing NB Red Irish Ale. 15 days out. On brew day, I had a lot of evaporation due to large surface area of pot and aggressive boil. Ended up with about 1/2 a gallon. Fermentation was going well and on the third day I added boiled/cooled water to bring it up to 1 gallon. Pretty sure I...

Just looked at and sampled. It's cloudy and sweet. Two weeks out. One more week?

Today is the two week mark from my first brew day. Should I bottle? I brewed Classic American Light.

This coming Monday is my two week mark from pitching the yeast in my Mr. Beer kit that I got for Christmas. It also is the two week mark for my Northern Brewer 1 gal kit. Both are my first attempts at homebrewing. I'm thinking about bottling the Mr. Beer this Monday and waiting one more week on...

I'm a noob. What about using a "wine thief"? That way you can put the sample right back into 2 gal fermenter.

    I can do that. Thanks.

I did aerate before I pitched the yeast, but did not aerate after I added the boiled/cooled water on the third day after pitching the yeast. This coming Monday marks the two week mark from pitching the yeast. Should I go ahead and bottle on that day? I do not have a hydrometer.

Thanks for following up. I have wee little bubbles that rise to the surface and yeast particles moving about a little. No action in the airlock. This coming Monday will be the two week mark.

One thing I learned: keep the pack of yeast when you only use half. Might need it if you mess up.

    1-Gallon Brewers UNITE!

Quick recap. Did my very first brew on 12/31/12 morning. 1 gallon NB starter kit. Red Irish ale. Nottingham ale yeast. Used half a pack. Lost a lot during boil. Added boiled/cooled water to fermenter on 1/3/13 in the morning. Fermentation had already started prior to adding boiled water...
