    Consistently Contaminated Beer

Infection can happen anywhere where there is bacteria. It won't "get into" plastic or glass if it's not already in there when you seal it up. I think Erythro makes a good point: try fermenting without a secondary vessel and see how it turns out. That could give you a clue as to whether the...

    How soon is too soon?

I built a cooler MLT based on this thread. So easy and works great. I'm another vote for just going for it. Why wait? It sounds like you already have some basic knowledge, so the rest will come with practice. As far as the difficulty of AG: making sure things were sanitized on my very first...

    Boiling Thermoplastic Tubing?

(Stupid question) Isn't PVC bad to work with at high temps (i.e. not food safe?). I'm not concerned about it being soft (I would let it cool), but now you've got me thinking about leaching something awful even though its rated over 212...

    bump. any thoughts?

    Boiling Thermoplastic Tubing?

Would there be any issues with boiling thermoplastic tubing as a cleaning/sanitation process? It's rated to 275*F so I don't see why not, but maybe someone has some info that I'm not thinking of...

    Campden Tablets: Crushed vs. Dissolved

To remove chloramines. I treated the 10 gallons in my BK, and then poured out of the ball valve into another pot to heat strike/sparge water. So I never heated all the water with all the chunks in it at the same time. I figure it worked fine, but just wasn't expecting to see a bunch of white...

    Campden Tablets: Crushed vs. Dissolved

First time using campden tablets this weekend. I crushed up half a tablet for ~10 gal of room temp water. When I stirred it in I noticed it did not dissolve very well, plenty of white specks all over. Is that to be expected? Should I do something to help it dissolve better or is it effective...

do you need more priming sugar for big beers?

What recommended levels are you referring to? If you're looking at the nomograph in the appendix (the same one that's in How to Brew), it's all based on temperature and desired volumes of CO2. If you want more carbonation, then you need more priming sugar. But the style of the beer itself...

    Massive starter issue?

+1. I think the idea is probably correct as a matter of science, but I've never had a problem. I generally pinch the foil pretty tight once it's off the stir plate and I'm not seeking O2 exchange anymore. It's worked for me, so I've never really investigated otherwise.

Yeast Starter in an Erlenmeyer Flask

Waste of hops. Follow up question, though: what are some methods for avoiding boilovers in a flask aside from fermcap? I am always boiling over when I boil in the flask...

    milled grain storage

Keeping it dry is most important. So if you're confident that it's protected from the moisture and vapor in the freezer, no problems. If it's not vacuum sealed, a cool, dry cabinet is probably a better bet.

Can trub stop the airlock from bubbling?

    You'll be fine. RDWHAHB.

Can trub stop the airlock from bubbling?

The airlock is just a valve on your bucket. It could be that there isn't a perfect seal on the lid and CO2 is getting out somewhere else. Hops in the bucket wouldn't stop a gas from acting like a gas...

    Yeast survival at

Had it been boiled and cooled? Or did you add yeast to near-boiling water? If the water was close to boiling temp, the yeast are dead.

    a question

+1 for extended primaries. But to the OP, don't feel like you did anything wrong by using a secondary. Just food for thought on tweaking your process for future batches. RDWHAHB. Sounds like everything is going perfectly. You won't see much of anything while your beer is in secondary. And...

    Just to clarify: Transferring beer

Not necessarily. You want to use a siphon once the beer has fermented in order to minimize oxygen contact. Right after you've brewed, though, you need to aerate your wort. Many people pour from their boil kettle to their primary in order to get the wort aerated. Also, once in your bottling...

    Best Boston area pubs

+1. IMHO: The Publick House is my favorite place in the city, but it's probably further than you want to go (Green Line-C to Washington Sq.) Cambridge Brewing Co. is pretty good, and in an interesting place. Sunset is overrated. Too many taps to keep things fresh, and too much of a...
