    First Time Making Cheese

I'm so new to this that I don't have a "process" yet! lol Thanks for posting the pics. I've read of people using containers to control the environment, but you make a great point about it preventing cross-contamination. That will be a necessity when I have more than one type of cheese going...

    First Time Making Cheese

Thanks for the advice! If I recall, they're sitting at around 48F and 87% humidity, 2.5 weeks into the process. Do you think that's OK or do I have the temp and/or humidity wrong? The recipe I've been following gets a little vague toward the end. Blue cheese is a great idea. It's not one...

    First Time Making Cheese

A friend asked for a photo of my Camembert batch and I thought I'd share it here. I've never made cheese before so I'm paranoid it isn't going to turn out right. So far it -looks- like it's developing as it should, though. I'm hosting Christmas this year and have been trying to prepare for...

    Going semi pro

@MaryB If I lived near you I'd be begging to be your apprentice. Sounds like you just need to find someone who wants to learn and do the grunt work while you orchestrate the chaos. :) Sorry you're unable to do more brewing etc but having an assistant would let you enjoy most of the process.

Questions about legality of homebrewing in an apartment

I'd bet it was just a knee-jerk reaction based on misinformation. People often jump to the "isn't that illegal" response when home brewing is brought up. I'd attempt a calm discussion with them, asking their reasons, and explaining that your intentions are well within the law.

How many gallons of homebrew in 2017?

Just for fun, I'm trying a kit for smoked bacon ale. Discovering I can squeeze in a brew evening after work could be dangerous. 9720

I'll check it out! I just jumped into the cheese making world so I can't offer any expert advice on your recipe, though. Edit: not finding the recipe...

    So who's brewing this weekend?

Worst brew day so far but I'm still happy I got to brew. First boil over, first scorch (yes, I removed the pot from the burner first). Getting used to the new house and stove is going to take some work.

    So who's brewing this weekend?

I'm determined to brew this weekend. It's been over a month due to moving and I'm going through withdrawals. I don't care if I have to climb over boxes - I gotta brew!

    Making a small sanitizer

I had a bucket of Star San go cloudy after just a little over a week. Since I don't have a way to check pH (yet) I added a bit more Star San to the bucket but the cloudiness did not go away.

Adding orange to my chocolate stout

Dried zest or peel is probably your best option. Drying it brings out more flavor than fresh. I agree that you should stay away from the fruit/juice ideas.

What does your rotation look like (repeat brews)?

I haven't been brewing long enough to really claim a "rotation" but I've known from the start that I'd have a brown ale of some kind on hand as often as possible. Still nailing down which recipe I prefer then I'll definitely repeat it. Otherwise, I'm experimenting to find other recipes that I...
