    Basement Temps in DC Area Good Enough for Lagering?

    I was seeing temps down to the mid 50's this past winter.... when the wood stove wasn't running of course (not the primary heat source for the house). That's in a un-insulated, concrete block and floor portion of the basement.

    FYI - mice don't have bladders. I'm not saying the mice were running around urinating on your grain, but that's a concern in my industry (very similar processes to brewing - including storage of "mouse food" that is NOT intended for mice).

    I can't remember the names of restaurants, but definitely get some mofongo - good stuff!! And if you're at all technical (read: engineer, DIYer, or general dork), don't waste your time on the bacardi distillery tour, it's just a museum-like walk - just skip to the end for the 2 free drinks.

    Glycol cooled conical - that way when you go underwater I can pick one up for less than a kidney and right arm. All jokes aside, congrats on the new house!! From personal experience, I'll echo brewingmeister and say that you should plan the inaugural brew rather than the inaugural brewing...

    best places to order keg fittings and beer line?

    +1 for kegconnection. I recently ordered a kit from them as well as some miscellaneous stuff - they noticed that some of the stuff wouldn't work together and called me to make sure I ordered the right stuff (I already had other connectors to make it all work, but the double check was nice).

    Cold sparging, great results.

    Isn't the logic of a hot sparge to deactivate (kil) the enzymes that are converting the starches to sugars? If so, the "cold sparging" would be logical for a drier beer, but if you are targeting to have some unfermentables in the wort.... wouldn't the enzymes continue their work until heated...
