I would def add some honey to the bill as well. Maybe towards the end of the boil and that'll boost the abv and hopefully add bit complexity! Sounds good and looking forward to hearing how it turns out!
I've never done outside fermentation. Going from 65 to 30 seems to be a pretty big change. I def would try it to see how it turns out. The outdoor brewing I've seen is in a cave/cellar situation that keeps a pretty consistent temp. I've seen folks wrap their carboy up in a blanket with a...

I had a similar issue with a dunkelweise that I made. I really think it might have been the iodine based sanitizer that I used. Maybe I had a bit left in the keg or didn't dilute it enough and it stuck to the sides.
Great stories! Six years ago I had brewed two batches of extract and thought that I was obviously a seasoned brewer...I went on-line and just started ordering different grains that sounded good at the time...ordered some hops...yeast and some honey. I ground the grains in a coffee...
So I have everything I need to build my mash tun except the tubing to connect my false bottom to the valve...do I need to find some high temp tubing for this? The homebrew stores around me don't have any. Thoughts?
