    Stupid question, and a little:off: but I do mini mash and partial boil, and have always wondered if I was supposed to treat the water I use to top up the fermented. I usually only mash and spared additions, wondering if anyone else could weigh in,. I use 100% ro water from start to finish

    My latest iteration, a New England style white IPA. brewed with coriander, chamomile, black pepper and cumin for spices. Amarillo, mandarina Bavaria and huell melon hops. Pretty darn good

    I brewed a bunch with Nelson before they became impossible to find. I really liked Nelson paired with Ron Mexico(HBC 438 I believe?). This was before I read this thread so they were more west coast style at the time but I remember myself and my friends really enjoying the beers

    I really dig it. I couldn't pick which hop I wanted for a single hop APA, so I decided to go with the classic. Has a nice tangerine pith sort of flavor, I'm sad that the beer in the picture was the last pour!

    This thread has been an awesome read. I've read every page and I have to say, I don't think S-04 gets much credit as a yeast choice. If you shake a 1l starter with a pack of s-04 and pitch at high krausen it makes a fantastic version of this IPA/apa. And the ability to keep dry yeast vs liquid...

    Lager still has diacetyl.

    I'm not an expert on brewing lagers, but it sounds like you're rushing the primary a little bit. Depending on the SG ten days isn't long enough of a ferment before a diacrtyl rest. My understanding you want to be pretty far along in fermentation before warming up, or else you're just fermenting...

    Honestly, you could probably get away with just the spices in there. That yeast will get pretty darn spicy on its own. Don't be afraid to ferment that batch pretty warm, like mid 80's F. I mean you'd probably be safe with something like clove? Or maybe some orange peel, kinda like a wit beer...

    Yea I'm with passedpawn on this one. Only real risk you got is it becoming too vinegary. If it doesn't taste like vinegar now, toss the mold and slap an airlock on the thing and you should be good. Some of my best beers were the worst looking. Roselare is awesome stuff, and don't be afraid...

    The beauty of wild beers is how different they are. They all seem to react a little different, and that's half the fun to me. Another plus is time will take care of a lot. Sours are some of the most traditional beers in the world, embrace the funk

    Just hit the receivers, and jam em on the line. Teams give them cushion and they play 4 yard dump pass all day. If you can **** up the timing it's lights out. I've the steelers do it a bunch, and also seen the giants do it twice in the super bowl.

Alex smith is not an elite quarterback, at all, but I give him credit considering everything he went through in his career, and to come within a punt return away...
