    Belgian Beers

    I have just "discovered" Belgian beers. Some are so-so, and some are quite tasty. Most importantly, the SWMBO discovered several she likes - hence another reason to brew some beer.... I will have to brew an Abbey of Leffe Blonde Ale clone soon!

    Pretty much the same. Work in the restaurant business, current job is IT, but have been restaurant GM, area supervisor, cook, host, bottle washer - wait, I'm still washing bottles now that I think about it :)

    Late Extract Add + Wort Chiller

    I would think that 15 min is overkill, time-wise, on sterilizing the wort chiller. Add the extract at the 10 min mark, stir to dissolve and then add the wort chiller -5 minutes should be more than sufficient. Restaurants only use a minute or two at 180 degrees to sanitize their dishware.
