Don't know if it was said yet or not but I've gotta say Thunder Canyon Brewery in Tucson. I should have known it was gonna be crap when I found out it was in a Mall. The food was mediocre and the beer was definatly not what you expect from a craft brewer.

I'm gonna say it fermented at too high of a temp and it's still young. But I'm still a noob so I wouldn't go completly off my word.

Why not go out to a good local brewpub and order a sampler? I'm never had one that didn't include about 12 different beers. And they're all in small glasses so if you don't like one you don't have to worry about wasting too much.

This is the recipe that I got from the LHBS for a Irish Red Ale. It's supposed to be pretty close to Smithwicks. I'm kinda new to the whole thing but it has more hops in it than any of the other beers I've brewed so I'm a little worried that it'll be too hopy. 6# ldme .5# chocolate malt...

I just got this into the primary and it taste delicious so far. Both my roommate and I got huge grins on our faces when we tried it.

I've heard of that being done before so I don't see why it wouldn't work. But if then how would you recirculate the water?

This works excelently (is that a word?) I live in southern az and thats what I have to do, there's no such thing as cold water down here in the summer. I fill my sink with ice water and recirculate the water using a pump bought at the local hydroponic store. Works great.

Just when I think I'm starting to learn all the terms I find a new one. Whats the clearing stage? I'm making this delicous sounding brew today and I'm a little confused. As always any help is appreciated.
