    Rarely do I see a deal in the grocery store and think I'd want to grill it right away... Then I saw beef short ribs on sale! Cooked at 275° for three hours and then braised in turkey stock and butter for 90 minutes... Crispy outside a buttery soft inside! 🤓😋😎

    These went on the 18" Weber kettle thirty minutes ago... It's just able to fit. I need to get my 22" ready to go so space won't be a concern 🤔

    Trimmed and in the fridge for smoking in the morning... Snake method on a Weber kettle with Cherry and Pecan. I trimmed off about 4.5# and it's 7.5# and ready for seasoning 😎

    I'm going to trim up a brisket tonight so I can smoke it on Sunday. A small #12 one as my 18" Weber can't handle much more than that! After trimming it will be 9-10# I think

    Decided to break in my newly repaired 18" Weber kettle (new ash sweeper assembly) with some country style ribs seasoned with Sucklebusters Hog Waller rub... Easy peasy

    Yeah, they have much more fat and scrap on them but the videos showed that getting smoked then braised in tallow or stock for barbacoa shredded meat 👍😃😎

    I used a chunk of pecan because I used a pecan flavored rub for seasoning, Deez Nuts from Meat Church!

    Chicken tonight and I'm using a Meat Church product called Deez Nuts (pecan flavored rub) and chunks of pecan for smoke.
