    I decided to do what my brew kit calls a secondary (two stage) fermentation. I understand all the pros and cons of this on going debate. My reason for taking this extra step is for clarity. I like a cleaner looking beer.

    Howdy Folks, I have an IPA that I've decided to do a second fermentation on. I want to catch it at the perfect moment. It is day 6 since I pitched the yeast. The bubbling has now slowed down. It's at about a bubble every 15 seconds. At what bubble rate should I perform the procedure? Thanks Bart

    Talk about starting slow. Yesterday I gave the brew a shake, today it's bubbling furiously. Yeah! Somewhere between 48 and 72 hours, it decided to do it's job. Lesson learned: be patient. Cheers Bart

    Howdy, Just brewed my second batch of Kolsch. The directions state that I should have had an OG of or about 1.042 - 1.046. Instead, I had an OG of 1.034 when I put it away to ferment. What does that mean? Will the end product taste bad? Will the alcohol content be low? Thanks Bart
