    You should plan on using the Roselare, Duchess is pasteurized/filtered and is devoid of anything you'll be able to actually culture. I have the Flanders Red from BCS currently aging (pitched the roselare straight-up) and seems to be coming along nicely.

    Hops and Mango

    Town Hall in Minneapolis, does a mango infusion with their Masala Mama IPA, which I think includes, Cascade/Centennial/Amarillo/Mt Hood. I haven't had the mango one but i've had the base Masala Mama and could see how mango would go really great with it. Good luck.

    Do you use PACMAN for non-Rogue beers?

    There would be a pretty substantial difference between Pacman and the Ardennes. I consider the Pacman to be fairly neutral and the Ardennes is a Belgian yeast, and kinda the opposite of neutral. I used the Ardennes in a Belgian Pale and it definately had that Belgian-y profile.

    Can I leave Roeselare for the whole fermentation?

    I'm planning on doing the same beer in the next few weeks, pitching the Roselare directly. I asked JZ about his procedure and his response was to leave it for about a week in primary, then moving it to a secondary for longer term aging.

    Yeah since building it i've used it for 4 or 5 PM's and its been working really well, no mechanical failures to speak of. The only improvement I'm considering is motorizing it. I only need to crush a few pounds per batch, but its still kind of a PITA cranking it out by hand.

    Paddock Wood is brewing on a relatively large scale (For Saskatchewan anyway) these days and I don't think they are in the supply business any longer. There is also a place in Winnipeg... Grape & Grain who I think has a fairly decent selection.
