    Nice! Should be a nice stronger IPA! By the way I really like Citra. It pairs well with many US and NZ hops, sort of like a hyper citrus essence. As a bonus, it will freshen the room as fermentation peaks!

    Hope it turns out well! I think the recipe looks good! For an IPA, it is not necessary to go overboard with late hop additions and dry hopping. The aroma needs to be there but you don't have to dump half a pound of hops on it.

    What was the original gravity of the brew? Personally, I don't think you need to worry too much. I have seriously under-pitched some batches without ill effects; the bubbling ought to pick up later as the yeast multiplies and even if it doesn't, it's not a very reliable measure of yeast...

    Actually, it's kind of a crazy idea but I want to brew a spiced beer with lactose and then ferment it on peaches or apricots. I have three pounds of each fruit so I could use solely one type or mix and match. I am thinking about giving it a graham cracker element to simulate a traditional desert.
