I have been doing BIAB for a couple years and am very happy with the results and simplicity that is possible. Of course, it can and has been made more involved a step at a time. ;)

Mine is similar. I removed the white plastic liner your reg. is attached to-removed the yellow fluff insulation, and replaced that with the solid-ish blue type stuff. Gained ~ 1'' at least.

No personal exp. with those, but they look cool. No temp. probe, but more info and Fahrenheit readout is nice. Have 2 STC 1000s- ferm chamber and keezer- both have worked well for several years.
