    Bread.

Chad, I am doing something wrong, or at elast different. When i put my final dough together I am using 1.5 to 2.0 sups flour easy to get tosomething manageable. I have been using active sourdough by weight as my biga. My active starter is 50-50 by volume flour and water. Are you maybe...

    Alaskan White

I find the Alskan Amber disapointing. The White was OK but I really don't like wheat in my beer. The IPA isn't anything to write home about. The stout is a very good basic stout. The smoked porter kicks butt, and scrubs the floor with competitors scalps. If you do a lot of beer/ food...

    Mash Schedule

The 122° is a protein rest that is pretty optional these days. Back when malt was unevenly malted and roasted (say before 1920CE or so) the protein rest was pretty important for head retention. These days with modern malts in 2010CE the protease activity is probably going to be detrimental...

Experimental 1 Gallon batches - What can I do safely?

+1 on the gallon size apple juice jugs at the organic food joint. You can do meads in those later and age them for months as long as you keep them away from sunlight.

Just started making some "Big Beers"... questions about pitching yeast and o2

This is a really common question and it's an important issue. I am going to spell this out one last time. I am going link this post in my sig, and I am not going to bang my head on this wall anymore. Starters do three things. 1. They prove your yeast is alive. This is important. 2. They...

    Molasses in a Porter

I used a pound of 82 Brix molasses in a Caribean style stout lately. It is still on the yeast cake. Mosher's recipe (Black Ship Pirate Stout) called for 1.5 # "dark molasses". Since I was using bear bait (my buddy did not get a bear this spring) I read up a little bit and knocked the...

Multiple Questions: Temp after bottling + Apple taste

Soak the airlock in hot water with a little OxyClean. You'll wave to jiggle it to get the soapy water through the tubing. I use a little less than a quarter scoop in five gallons unless I am soaking labels off free bottles. Leave it a day, rinse, repeat, probably take two or three days total...

    Bottling from a keg

You can use 2 liter bottles as growlers. Half gallon screw top growlers with lids run about $8 each up here, highway robbery. But if you got 2L bottles, those will be fine. the trick to filling a growler is get it "clean enough" for however long you expect the beer to last, and keep it darn...

Have you ever had an absolutely horrible day?

If no one cares when an autosiphon lands in a dumpster, does it still make a noise? Do something nice for SWMBO, the rest of it is small stuff not worth getting worried about.

What beer am I looking for?

Or an export stout. Also farm stouts and milk stouts will meet the stated parameters. Baltic Porter if you can lager, but time is short for that one.

A jolt of coffee to make the garden grow.

In many climates south of Fairbanks, AK a pound or two of used coffee grounds (in a 3x6 raised bed) will lead to earthworms as fat as a man's thumb by the end of the second season. You can also pile them up at the foot of a tree near your favorite fishing hole so you don't have to pack in...

brewery and beer name assistance - horse racing related

Horse brew, uhh, horse piss? Sorry, it's an Yank think about Budweiser, when the bottling line is running slow they got a barn full of Clydesdales. Probably a play on draught will work. draught horse draught Old Nellie's Draught. You got a wide open individual brew pasture...

What does it take to sell beer?

You might look into building a fuel alcohol still first. There are both state and federal guidlines to meet, I am familiar with NC but not CA on this one. Anyway, you can build a system and maybe let the still operations pay off your equipment. As of 2007 (in NC) you needed a "building...

Getting Started -- In need of advice

With plums and bananas you want to look at wines. You can get plum flavor notes in beer, you can get banana flavor notes in beer, but it is achieved without the use of either. My brother in law makes wine, the short version is you put the fruit juice in the jar, you put the yeast in the...

    Question about cleaning bottles

Just another OxyClean user checking in. I soak for how ever many hours it takes to make it easy, then rinse thoroughly and store clean / unsanitized. On bottling day I sanitize a few more than I am going to use and put the unused bottles back on the clean/ not sanitized shelf. Works for me.

    Wort chiller - runoff water

EdWort has a system that size. Lemme find the link. Here ya go. If you choose carefully the bucket that holds your ice water can also serve as a fermentation water bath. https://www.homebrewtalk.com/f51/recirculating-ice-water-chiller-38235/ HTH, P

    Wort chiller - runoff water

I set up a recirculator with a pond pump from Lowe's. I recirculate the water from the chiller back into the ice water tub with the pump in it. How big a boil do you need to cool?

    Crash Cooling before bottling?

Well, probably it will still carb, just not as "fast" as you might have hoped. Go ahead and use the standard amount of priming sugar. When you are happy with the dry hopping rack it off the hops into your bottling bucket. Once it is capped give it the bare minimum 21 days at 71°F, then pull...

    Priming Sugar for Barley Wine

The 2009 AHA style guide does not include carb levels for Brit or US barleywines, I don't have my 2008guide handy. Per Mosher (Radical Brewing) p 68, 0.55 cups per five gallons will bring you in at medium low carbonation with 0.67 cups per 5 gallons will bump you up to medium carbonation. In...

Need some pointers on a very pale ale

I downloaded my own ProMash demo. At 80% brewhouse this comes in at 1.040 SG, 11.x IBu and 4.6 SRM color, meets guidelines for North American Light Lager. Snark. I am using Saaz this time. 5g iof 1.040SG = 80% brewhouse.
