    Tomato Wine

Has anyone ever done this with honey? Something akin to a tomato melomel? I have a plethora of great tomatoes and some great honey too. I have a special yeast in mind too. I may start this over the weekend. I will keep notes updated if I do. GTG

    WLP644 -Brett B Trois

smokinghole, WilliamWS and dcp27 thanks for the feedback. I entered it as a 16 E. I think its a great beer and so does everyone else that's tried it. My friends aren't experts by any means but I have a good feeling for this beer placing well. I entered a peach saison with brett c and a...

    WLP644 -Brett B Trois

Back in Nov of last year I used this yeast to make a tripel with mostly pilsner LME, a little wheat DME, palm sugar and thai basil. It's a really nice beer that I would like to enter into a competition coming up. There's the ongoing discussion of adding brett primaried beers to the BJCP style...

    Toasted Oak cubes question

Sorry to carry on the hijack - I smoke 3 lbs of mesquite pods over some old growth, center cut, mesquite wood for about 3 hours. Then that sits and airs out for about 2 weeks. Those pods get broken up and steeped at 150 for about 2 hours and that extract is added to 4 lbs amber DME, 2 lbs...

    Toasted Oak cubes question

I use oak barrel stave chunks in my ferments. I also have a mesquite smoked mesquite that I use mesquite wood in the ferment with good success as well. Not pine though! GTG

I've read not to use red oak for putting on for aging. Wine, spirit and beer aging barrels are white oak.YMMV. GTG

    Mesquite Molasses Beer

Their syrup tastes like syrup. There's some mesquite flavor in there but not like when you roast and make your own extract. GTG

    Mesquite Molasses Beer

I checked the ingredients of their mesquite syrup - sugar, juice from mesquite beans and pods, apple juice, lemon juice, citrus pectin, citric acid. I also put in an inquiry to their site to see what types of mesquite they harvest from. GTG

    Mesquite Molasses Beer

Yes I fermented on mesquite wood. I do this often with pieces of wine barrel staves. I used mesquite as described in Jack Keller's blog - http://winemaking.jackkeller.net/wineblog6.asp Scroll down to August 17th 2005. Yes to make the syrup, the chaff is what you want to use. GTG

    Mesquite Molasses Beer

So far this year I've brewed two different mesquite beers. The first was a saison made with some purple mesquite pods that I found. I used them to make an extract along with some pilsner, orange rind and juice fermented with dregs from Great Divide's Colette. The second beer I did won a...
