Has anyone ever done this with honey? Something akin to a tomato melomel? I have a plethora of great tomatoes and some great honey too. I have a special yeast in mind too. I may start this over the weekend. I will keep notes updated if I do.

I smoke 3 lbs of mesquite pods over some old growth, center cut, mesquite wood for about 3 hours. Then that sits and airs out for about 2 weeks. Those pods get broken up and steeped at 150 for about 2 hours and that extract is added to 4 lbs amber DME, 2 lbs...
I use oak barrel stave chunks in my ferments. I also have a mesquite smoked mesquite that I use mesquite wood in the ferment with good success as well. Not pine though!

I'm interested in this to act as an auto siphon filter to help keep fruit and such from clogging the siphon when I rack. I'll continue to watch for pricing and availability and purchase once available.

I checked the ingredients of their mesquite syrup -
sugar, juice from mesquite beans and pods, apple juice, lemon juice, citrus pectin, citric acid. I also put in an inquiry to their site to see what types of mesquite they harvest from.

Yes I fermented on mesquite wood. I do this often with pieces of wine barrel staves. I used mesquite as described in Jack Keller's blog -
