    I just left it in the carboy for two weeks, then kegged and stored in the temp-controlled freezer for another few weeks. It cleared up fast. I may have to do another 15 gallons in August. ;)

    Currently enjoying this. I made 15 gallons, and it turned out great. I used some repitched British Ale yeast, which made it benefit from a few extra weeks of conditioning in the keg, but now it's crystal clear, clean, and delicious. I've even been using it to make pizza crust and homemade mustard.

    Yeah, they're the same size as the ones featured in the links above. I can get you exact measurements if you'd like, but they're around 4ft. tall by 2ft. around?

    That's what I was curious about. I bought them from the co-op....they dried out a bit over the course of a month, so I rehydrated them in the bourbon. I didn't notice an oily sheen on the bourbon, though.

    I force carbonated slowly over a couple of weeks in a keg. I added about a cup of bourbon. This beer is more of a 'dessert beer' for me than anything, so it's not really that big of a deal.....but it's the first beer I've had this issue with. It DOES smell great, though! :)

    Hopslam Clone...

    Yeah, I should have clarified that I was speaking about using honey as opposed to honey malt. I've also done DIPAs with sugar and yes, got the same dryness. Not so with honey malt. Kind of excited for Hopslam to arrive in a month or so, too!
