    Tap water does not introduce infections. Many people top off extract without boiling. I’ve never had a problem with it. You could boil some DME as mentioned above or just enjoy your low alcohol beer.

    Is your brew cart wooden? If so you were insulating the bottom. If you don’t like the 17 hour answer, sit it on the concrete as it is a big heat sink.

    Theoretically this could happen, but that wasnt the problem here, the ending sugar was very close to his target, it was just diluted due to excess water. If he would have skipped the mash out water, it would have been just fine.

    Are you serving from the fridge or just storing it there? Do you have room for a CO2 canister, regulator, and hoses in there too? You wont need the floating dip tube if you are just storing it, but they are good to have anyway :).

    Well you ended up with about twice the water you expected, so the OG would be very low. I suspect you didn't hit your estimated boil rate (1.875 total). What was your pre boil volume?

    nothing boils of during mash, that variable may be for full volume mashing? I use 1.25/1.5 to mash then add sparge water in my all-in-1 to get to my pre boil target. I can get 16 lbs+ in my robobrew pot and its not even close to the top.

    Yea, if you just set it in a snow bank, it'll be slower, needs agitation. But still 1 1/2 hours with the lid on isn't going to cause any problems. Try the sink ice bath, and save the chiller for when you step up to larger batch sizes.
