    I fully agree. Fermentation temperature control led to the single largest improvement in my beer since I started. There are many ways to accomplish this, but you really should find one that works for you.

    The nose stinging is kind of a common complaint, usually resulting from the CO2 produced. The saltiness is interesting however, it isn't possible that you forgot some PBW or oxyclean in the carboy before you filled it, is it?

    I use a bench capper, but based on my understanding of how wing cappers work I think that they should be just fine. I don't know that for a fact though, I have never used one.
