    Last year's 1/24 Irish red that I eventually rebottled into bombers because the 12 ouncers were yeast bombs. Now it's flat and weirdly smooth, almost like port. The more I brew beer the more I find that it (mine in particular), can be strange.

    Ground grains for tomorrow's brew. This was made challenging by scale and grain mill malfunctions; fortunately, troubleshooting resolved issues in the time I had available.

    Brew less; brew better. Generally be more organized, attentive and dial-in on details. In brewing and all other aspects of my life.

    Thank you. It's highly likely to end up weird, with Maris, smoked wheat, Saaz, and Nottingham. If so, I will post nothing about it

    My next beer after the dark mild this weekend is going to be a clone of your Smokestack Lightning, with your permission. 50 / 50 wheat malt + smoked, Saaz for bittering, haven't figured out the yeast yet.

    What are you drinking now?

    Bourbon vanilla pumpkin that I brought for my wife's friend to try was actually a hit. Bourbon has faded, esters are popping - not in a bad way. Tastes almost like a Belgian. Another fortunate accident.

    Ordered hops (Goldings, Fuggles, Magnum) for next two batches. Lack of foresight + extended shipping times = last brew of 2024 now being the first of 2025.

    Thinking of changing it up; decreasing Crystal overall, Crystal 60 slightly, adding some Crystal 80. Grain bill will be : 5.75 lbs Crisp Maris .5 lbs Crystal 60 .25 lbs Crystal 80 .25 Chocolate Hop schedule is : .75 oz Fuggles @ 60 .75 oz EKG @ 30 .75 tsp Irish Moss @ 15

    Interesting. Maybe I'll try a small amount of Crystal 150 instead of the chocolate malt. All 3 would be too much.

    Are the two different Crystal malts for flavor and color, respectively? Crystal 150L must be pretty dark, hence the relatively small amount.

    This is the recipe for what was supposed to be an Irish red - the LHBS store owner steered me away from roasted barley, toward chocolate malt for some reason. The resultant beer was nothing like an Irish red, more like a brown ale; maybe even a dark mild. Grain bill was : 5.5 lbs Crisp Maris 1...
