I brewed an oatmeal stout last sunday, on tuesday temps were in mid-high 70's (76ish) then dropped to 69-70 the next day. I used Danstar Nottingham yeast.
They are good for experimental batches of beer also...
Make a 5 gal batch, divide between 10 bottles and add different things (dry-hops, oak, whiskey, vegetables, fruit, small children) just go crazy!
Besides incomplete fermentation, you may have to condition the beer a bit before its drinkable.
All in all... you are making beer any way you ferment it. If it comes out good, you did good! In other words, there is not any one proven way to ferment.
