    American Pale Ale

I went with 10%, as what I read suggested to be cautious with the use of rye. Maybe I'll try 20% if you say it is noticeable, but not overpowering.

Donasay: Well played; very well played indeed.

    American Pale Ale

I am looking for something on the drier side, and not so much sweetness. If I understand you correctly; I plan to not add the crystal. I may look into adding another type of malt; I'll just have to see what strikes my fancy. That's what it's all about, right!

    American Pale Ale

For educational purposes, those who suggest adding crystal malt, why? What am I missing by not adding it? Yes, I apoligize for not having anything. I was just goofing off last night, and thought I sounded okay. I will try to figure out the hops tonight and post it tomorrow morning.

    American Pale Ale

I was toying around yesterday with some equations and using mock recipes for the calculations. I figured I might give one of them a try; however, being a noob, I wanted to post it and get feedback. I have not decided what I want to do with the hops (nor have I done many calculations yet) so I...

First brew, hot wort, and siphon

That is another option; however, I am running it though a counterflow-wort chiller, so that won't work as well. I think the technique I will try next, is to fill a bottleing bucket with enough water to make 5 gallons with the wort. Then transfer the wort to the bottling bucket, which will...

    Where do you brew?

Brew'n in the kitchen! Fermentation/storage in the spare bathroom.

This is why I love Homebrewing---my Citrus IPA

I'm just about ready to bottle my Palilalila IPA, and now you have me wishing I saw this receipe sooner. How did it end up turning out after 4+ days?

First brew, hot wort, and siphon

I plan on bottling the IPA this weekend (Sat or Sun). This will give it 3 weeks in the primary and today (Monday) it has a SG of 1.012 (OG was 1.052). It is darker than I thought (copperish), and didn't clear up as well as I thought it would. I'm not too concerned considering: A) it is my...

Way too many hops by mistake.

Where'd ya dig that fancy graph up from? I to say let it set and see what happens? Worse comes to worse, make another batch, get your buddies good and schnockered, then bust out the bitter beer....they will probably never notice :mug:

Wife thinks wine taste like beer....WTH!

She is not a beer drinker; however, she is a wine drinker. According to her, my wine, at best, does not taste like wine. I have to agree with snickasarusrex, I think it is too green and she's picking up a yeasty flavor. Agreed, there are no hops or malt in there so I don't know why she thinks...

Wife thinks wine taste like beer....WTH!

That is what I am hoping. I know the apfelwein was green when we plowed through it; therefore, I am hoping that is the case with the strawberry wine. I didn't mention it earlier, but it's only about 20 days old, so I'm certain it is very green. I'll check it again in about a month.

    Boones Farm Clone

Excellent! I figured if it was 6 gallons, I would be okay, but wanted to see how others faired. Thanks!

everyone have a drink for my POOCH tonight

I'm sorry to hear. It's probably one of the toughtest things we ever have to go through. I will, albeit sadly, have a drink for your pup. I got this in a chainmail a while back.... gets me every time: Being a veterinarian, I had been called to examine a ten-year-old Irish Wolfhound named...

    Boones Farm Clone

Reading the product sheet, it calls for an 8 gallon primary. Do I need this or can I just use a 6 1/2 gallon? I'd hate to have to buy an 8 gallon if I can get by with my 6 and a halfer!

    Calculating Malt Bill

I want to RDWHAHB; however, everyone here has caused this entire hobby to SPIRAL OUT OF CONTROL in the quest for a better brew. :mug: With that said, it is a heck of a book and makes me want to be a better brewer, and really understand the what and why of brewing. To ajf: Thanks, I...

This is a bit OT; however, which grains do not do well in a steep?

How to design a beer (extract)? And, a recipe.

Understatment of the year. I second Ray Daniels book as well. Papazian's book is great, and got me off to a great start; however, Daniels takes it up a notch (or 2, or 3). It has opened up my eyes to a whole new level of brewing. I am in the process of trying to design my own beer right now...

    Calculating Malt Bill

I am reading Ray Daniels, "Designing Great Beers" and trying to understand the process of calculating the malt bill. For those of you who have the book and would like to follow along, I will include page numbers for reference. I am using the calculations he has listed on pages 29 and 30...

Wife thinks wine taste like beer....WTH!

Thieved some of my strawberry wine to get a SG reading (0.994) and decided to give it a little taste. I think it is fine; however, the wife thinks it tastes like beer. I had this same problem with EdWort's Apfelwein, her and mom thought it tasted like beer. So am I missing something, could it...
