    Working From Home

I love teleworking! I get to speakerphone many of my calls, and most of them I don't even need to talk on - so mute stays on, and I'm free to multitask by taking care of my wine/beer artistry! LOL

    Another new guy

Well, after reading through many threads on this site, I decided to scrap the directions LOL. The Blonde and the Cream - I left both in primary for 2 weeks, rather than the 1 called for in the instructions. This past weekend, I racked them into secondary, where they will stay until it feels...

    kids helping me brew

7 pages of similar, I'm sure, but here goes anyway: they're clowns! My son has helped me with my winemaking for well over a year, and is already looking forward to helping me with my beer efforts, too - he's 9. Hell, another place/time, EVERY child would know how to ferment beer and/or wine -...

Trying to make a Bordeaux (I'm new to wines)

Sorry, man, I'm in Winnipeg ... over 3000 KMs away from you. Your yellow pages (or your local beer brew shop) should be able to point you to a wine kit resource locally.

Trying to make a Bordeaux (I'm new to wines)

If you're looking for a Bordeaux-style wine in kit form, there are options. KenRidge Classic 'Trilogy' is pretty good, although I'd go with half the oak they provide (YMMV). I believe it's a 10L kit, but it's quite good in spite of that. The St. Emile pail from FC Collection is 23L of must...

    Which riesling kit...

I'm not all that promiscuous with Riesling just yet, but I'd suggest you only look at kits that require little or no water added. GL! EDIT: I should point out that I have a riesling going through primary fermentation right now, and this is my first one. It's a Mosto Italiano kit featuring 23L...

Trying to make a Bordeaux (I'm new to wines)

I'm pretty sure there is, if not in the local parlance, then certainly in international wine-speak. Even the Institut National des Appellations d'Origine recognizes Bordeaux as a wine producing region.

What to ignore in wine kit instructions?

With wine kits, when starting out (and especially with Winexpert kits), I'd just follow the directions to the letter. Wine kit companies spend a lot of time/money on R&D trying to figure out the easiest ways to get the best product, and usually the instructions reflect that thinking. Winexpert...

    Another new guy

Thanks! Good to hear about all these other types ... my local store only had a handful (maybe 5, of which I picked the 3 I listed). I'll have to start bugging them about staying current with Festa's offerings!

I'll definitely keep this in mind and that link looks super useful... thanks man! :mug:

    Another new guy

I've got 3 on the go right now: * Pale -> this one is in secondary at this time * Blonde Lager -> in primary * Cream Ale -> in primary REALLY looking forward to drinking these... it's gonna be super hard to wait a few weeks after bottling them up.

Plugging a carboy for long-term aging

Airlocks are fine - just check 'em often and top up as necessary. I create and store my drinks in the same place, so I'm in there often enough to notice when an airlock needs to be topped up - If they're tucked away out of sight, maybe just create a reminder on your phone or whatever, weekly...

can screw top bottles be corked??

Can be done, yes. Probably shouldn't be done, unless it's a last resort. :D

    Aerating wort AFTER pitching ...problems?

I'm new to making beer, and got so wrapped up in the new processes that I neglected to properly aerate a batch ... as a result, nothing much was happening. I used my wine whip (drill mounted stir stick) to beat it up a bit, and it's taken off quite nicely now.

Does your spouse/significant other support your brewing?

My wife is supportive. She helps me when bottling wine, and I'm sure she'll help once my first beer kits start finishing up, too. The better thing is that she only occasionally sips either substance - so most of the finished product is mine, all mine!

    Is secondary ferm needed?

    "Chewing the fat" maybe? :D
