    Congrats and it sounds like you are on the right track. As long as you took care to make sure everything was properly sanitized and your fermentation temps are good you will be fine.

    Grain bill amount

    I haven't brewed an all grain stout yet and was wondering if it's typical of the style to have such a high percentage of the grain bill being specialty malts. It looks like over %30 in this recipe.

    Help using Perle hops

    I'd add at least an ounce @ 60min and switch to a 15min and 5min addition to get more of the flavour and aroma out of the Perle hops. I'd go for Nottingham or US-05 for dry yeast or Wyeast 1056 for liquid.

    Advice on a small AG rig

    Just curious what kind of stove top you have. I just have a ceramic stovetop and would have a really hard time getting a rolling boil if the batch was above 3 gallons. Is your stove top gas or are you splitting the batch between 2 kettles?

    Refractometer

    I purchased a refractometer off ebay for about $25 and I couldn't imagine brewday without one. I can quickly check gravity at every step of the process to make sure I'm on target. I still take post boil and pre boil hydrometer readings to make sure my readings are spot on.
