Since you asked....
To up the SG we use Old Orchard apple concentrate. If you do use concentrate make sure it has no preservatives.
We also add some acid blend, some tannin for backbone, and a teaspoon of pectic enzyme to help clear the haze.
The bottle conditioned stuff we do is bone dry...
Ack. Heineken in the US isn't even a third world beer. And it's what Delta has as their premium beer.

Talked to Bill at Brightonwoods Orchard and while they do grow some "spitters" - cider apples - they are all allocated to the ÆppelTreow, their onsite cidery.
They will sell their drinking cider bulk for $5/gal which save a couple bucks/gal if you drop off your carboy/bucket the weekend...
