    I took one between the eyes from a wasp last summer. I beat the little ef'er senseless with a bag of coffee. He was still twitching around 20 minutes later when I got home. Yeah hell of an adrenaline rush. Like the first time I got a car over 120.

    [Disclaimer] I used to think that the foil/airlock argument was moot too. But.... It shouldn't be off gassing the entire time. The ferment should be very quick that is why you are stepping up every day, or every other day. After the very short ferment there will be time for some gas...

    No. Just a fleeting barely there tingle on the lips and tongue and then it disappears, not unpleasant at all. Just excellent complexity. The flavor citrus, floral and resin really shine from the peppers. It's good.

    Whole grain rice still does not have the actual husk (The protective jacket), but rather just the hull (the otter [outer] skin of the seed).

    I think the recipe looks decent, but not an APA, or IPA. It would make a nice light amber beer with a balanced level of hops that give it a continental flair. I like harry dogs second line up. 1 Tett @60 1 Tett @15 1 Haller @ 5 or maybe 2

    Dried corn husk from the ethnic food area. but you have to buy a lot of them and cut them up into tiny confetti like pieces. How much rye are you using? If it is just a pound or two I don't think you need to worry.

    Oh ok. I had read some stuff on a page about hops, but it was vary lacking on info. Thinks for the reply on this. That one sentence did more for me than the entire hop page I had read.

    This is a great beer. It is still very young, but I just cracked a bottle open (8 Days after bottling) and it is amazing. Big, bold and dense, white, rocky head. The OJ taste is gone and there is a pleasant bitter, citrus and floral flavor left with a complex spiciness from the rye and schezuan...
