A standard fryer might not work if it is too breezy or too cold. The BTUs are almost too low even for a 5 gallon batch. You could do too boils or find your self a Bayou to up the BTUs. It might work with a wind guard, but I don't know.

Eww... Don't do it. This sounds like beer suicide. Non dairy creamer is just a step or two away from being plastic. You don't really want that in your beer. The fats will kill any head retention and the fats will rancid over time.

I don't really do the split batch thing. I get really commital about things, and cannot bare to split up my ideas. For me it is all or none. I'll most likely do oak and cherry or vanilla and cocoa. What would you guys do?

Wild rice makes good beer. it is very nutty and turns the beer pink. Randy Mosher has a couple recipes in Radical Brews and Papazian has a recipe in his beer travels book. It adds more flavor than fermentables.

if you're brewing extract it might not have been mixed well for your first reading and then equalized as it rested. I would take the second reading as your actual OG. If the recipe is calling for near 1.051 this is most likely the case. Extracts brews are hard to mess up the gravity.
