    I did that once and made an IPA. It came in second in a competition. I called it "UWIH." Use What I Have. I've made that recipe several times with some modifications.

    I brewed two Belgians last year, a Dubbel, and then a spiced Quad for Christmas. The Dubbel finally blew last week. It took almost a year to go through it. I do have plans for a Singel this year, but that will probably be it.

    Mishaps you are embarrassed to admit...but can here, we're all friends.

    I've done something similar. I run my RO water directly into my HLT with a float valve to shut it off. I learned that the float valve won't shut off the water if I forget to close the valve at the bottom of the tank. My wife was the one who found the water all over the floor!

    I tried mixing them into the garden soil and spreading them out over the lawn but it attracted ants. We have enough ants as it is so they go into the trash. We don't have enough space to try composting.

    I get my hydrometers from Williams Brewing. I have one (actually have spare also) that reads up to 1.100 in ,001 increments and another that reads to 1.020 for finished gravity.

    You can also use a wine thief. That's probably easier than setting up a siphon and less waste.

    NHC 2022

    I always wanted to win a NHC medal. I've probably had 8 or 9 beers make the finals. I finally got a silver in 2019 for my German Pils. I'm happy and I'm done.

    90% of my beers have pilsner malt in them and I have not had any issues with DMS. I've been using a condenser for almost three years.

    I've been to Dusseldorf twice for the Sticke release at Uerige and Schlussel. IIRC Uerige's was about 1% higher in ABV. They use it as a chance to try different hops in their beer than they normally use. It gives the brewers a chance to play around a little bit.
