7 days is way too young for almost any beer. Let the yeast do their job and don't rush things. I month is more appropriate vs. one week.

Check out the swoftware forum on this site. Lots of choices. I have used ProMash on the PC and BrePal and iBrewmater on the iphone. I currently use iBrewmaster pretty much as my go to. Beersmith is another popular one though I have never used it.

I have brewed many batches of extract without a hydro. Just use whatever the recipe says as your OG. And even with few all-grains. I like to have one to get a feel for the OG and efficiency. But if you are fairly certain in your process it's not necessary. I finally switched to a refractometer...

Kegging is definitely easier but way more costly. Bottling is cheap and effective. But takes more time.
