    I'll agree on the lower fluoride and chlorine content in RO or distilled water. But there are no such controls on spring water, depends on the water source.     How do I clean the krausen crust off of the side of the glass carboy?

    You can also put the solution directly into the bucket and lower the empty carboy into it. A hose in the carboy to displace air will ensure that it settles at an equilibrium volume, then you can pull the hose out. Should save lifting 20 pounds of slippery glass.

    Useful link, interesting that acetic acid attacks polycarbonate. Don't get any vinegar on it.

    What is the chugger made from? I don't forsee any issues, 10% citric acid does not have a pH much lower than orange juice. And less acidic than coke. Polycarbonate is also fairly inert, but you could test on a cd or dvd, I believe they are polycarbonate.

    I thought you want to avoid vigorous stirring while the wort is hot. Doesn't that add oxygen while the wort is susceptible to add off flavors?

    How do you cool your wort?

    The ice bath needs some water in it. Ice itself is a poor conductor of heat and needs water to be effective. Throwing some salt in the ice bath lowers the freezing point to below 0C allowing for faster cooling. I've done this a few times in the kitchen sink.
