☕ Coffee ☕: Ingredients, Roasting, Grinding, Brewing, and Tasting

I buy all my beans from Sweet Maria’s, they always have a wide selection to choose from, seldom pay more than 8.00 /lb. My go tos are Kenya, Ethiopia, Guatemala, Colombia. I roast with a Behmor, would love to move up to an Aillio Bullet to roast more consistent. But I do a pretty good job with...

    Homemade Bread Thread

I’ve been making sourdough bread for a number of years, just recently gave up on wicker bannetons in favor of USA bread pans. Makes the whole process easier and slicing is a breeze.

Question regarding coffee roasting times and level

I’m in Alameda. If it works that would be great. What types of coffees are your favorite to roast? I’m most fond of Ethiopia, Kenya, Guatemala, Colombia, and maybe some others sometime.

Question regarding coffee roasting times and level

My $.02. I've been roasting with a Behmor for >10 years, originally a 1600 then upgraded control board to 1600Plus. I buy my beans exclusively from Sweet Maria's (fortunately I live local). As far as process goes, I roast 12 oz at a time, I don't pre-heat the unit. I just load the beans in the...

Fermzilla Gen 3.0 doing away with the dreaded collection jar

The SS elbow and valve is just in a box on a shelf. I’ll let it go, I’ll check what I paid and make you a good offer on it. Watching the Olympics now. I also use a TempTwister with the hop bong, it’s a tight squeeze but it works. I bought a cheap tubing bender which helps, I had to abandon the...

Fermzilla Gen 3.0 doing away with the dreaded collection jar

Hi, I ended up abandoning the SS elbow altogether and going with the 3.2 collection jar. Also added hop bong, I dry hop via hop hong then following day I rouse the hops/trub w/co2. After two days on DH I close butterfly valve and dump the hops/trub.

How to Get Gelatin into Pressurized Beer?

I inject finings (gelatin and or Biofine Clear) mid-transfer oxygen free. I use a 500ml SmartWater bottle with a piece of EvaBarrier tubing on the stem of a carb cap long enough to reach the bottom. I purge the bottle with co2, then pressurize > the receiving keg, make sure you purge the jumper...

poll - how do you transfer your beer?

I have been doing oxygen free transfers for quite a while. I wouldn't do it any other way. I also use a scale to help monitor progress. I put the clean and sanitized keg in the fridge or kegerator the day before so its cold, I pre-crash the beer in the fermenter. Saves my kegerator from working...

I have an idea for controlling the temp, do you think it will work?

This may or may not apply, but this is what I do, I use a Fermzilla to ferment w/ a temptwister, thermo probe just taped to outside of Fermzillla, I have a jacket for FV, Also a Fermwrap, and InkBird, 10 gal Igloo w/ submersible pump, insulated tubing feeding TempTwister controlled by InkBird...

poll - how do you transfer your beer?

I purge my transfer hose/tubing w/ co2 before starting transfer. Use co2 pressure to force beer from Fermzilla via floating dip tube. Works for me.

Emptied my first keg. Line and tap cleaning?

I use a three 2 liter bottle method with carbonation cap and piece of Eva tubing long enough to reach the bottom; one with PBW, one with StarSan, one with carbonated water. Pressurized with co2, connect to ball lock disconnect and serve one of each, in that order. That works for me. I use a...

How many pounds of coffee roasted in 2023?

I don't keep a journal of my roasts, I roast 12 oz at a time and roast once or twice a week, sometimes three times, every week. So ~ 50lb a year. I roast mostly Africans, Ethiopia, Kenya, Rwanda, Burundi, plus Guatemala, Colombia. I buy from Sweet Maria's in Oakland, also buy their blends at times.

Fermzilla Gen 3.0 doing away with the dreaded collection jar

Wi went through all the gyrations, eliminated the butterfly valve, but trying to dump the trub out the bottom was getting a lot of beer so now I’ve upgraded to the Fermzilla (a step at a time) and today is my first brew since the change. And I bought the hop bong too.

    Passion fruit-driven IPA

I’m VERY interested in a proven passion fruit IPA recipe, anxious to hear how it turns out, the basic specs sound good for what I want to brew. I have a passion fruit vine in my back yard and just finished processing/juicing a second harvest, now I have 8 pound of juice. Had a birthday party...

Fermzilla Gen 3.0 doing away with the dreaded collection jar

Too bad you can't order from Kegland, Morebeer, and William's, kind of limits your options. So I you have the Fermzilla 3.0 you have the smaller 2" - 2" butterfly valve. I had the same thing and bit the bullet andd bought the 3" - 2" butterfly the Fermzilla 3.2 uses and the 3" - 1.5" SS reducing...

☕ Coffee ☕: Ingredients, Roasting, Grinding, Brewing, and Tasting

Yea, with the Behmor you have pretty decent control. I've f*ucked a few times by leaving it unattended. I always set a timer on my watch for 14 minutes from start then stay with it to cooling. I go a little into second crack, but I open the door with the mini-shopvac to collect chaff and suck...

☕ Coffee ☕: Ingredients, Roasting, Grinding, Brewing, and Tasting

OK so that's where I started with a heat gun and SS water bowel. IMO the Behmor, I think it's a 2200 now but I bought the 1600, then upgraded to 1600 Plus I've had it for years had to fix it a couple times but support is really good. Company is in Reno, NV I think. I use mine a couple times a...

☕ Coffee ☕: Ingredients, Roasting, Grinding, Brewing, and Tasting

What roaster do you use? I also have been buying greens from Sweet Maria’s for years, I’m in Alameda, CA so they are local to me. Been getting several 92 point Ethiopias lately, also like Guatemala, Kenya, Rwanda. I have a Behmor I think it’s a very good roaster.

Fermzilla Gen 3.0 doing away with the dreaded collection jar

Well several things I hate and a few I like. I had a Fermzilla 2.0 for over a year, sometimes the collection jar is nearly impossible to get off. I used a bunch of strategies to help; 1. put skateboard grip tape on the jar so the strap wrench didn't slip, 2. use keg lube on the o-ring and the...
