    What are you drinking now?

Sierra Nevada Pale Ale. For research purposes only... When I run out, some of my first ever batch, a Scottish Ale.

    So who's brewing this weekend?

Pitched at 11pm last night on my own Curly Blonde Ale. My first full boil, and also my first that wasn't making the airlock rattle the next morning. It's moving, but not like it has been. Still, R,DW,HAHB. We'll be fine. CAn't wait to try it though!

    Beer is in bucket...now what?

Agreed. I only mentioned secondary for clarification because i don't have a fridge big enough to cold crash, and assume that most new brewers don't. Whatever works. My second brew was 100% clearer than my first because it spent a few days in secondary.

    Beer is in bucket...now what?

I'm hardly an expert, but I'm pretty sure you're good. RDWHAHB. I did probably the same kit for my first brew a month or so ago, messed up a few things, fermented at too high a temp, didn't take gravity readings, etc., and after 3 weeks in the bottle it's seriously good. Airlock activity was...

    TW Fry's Oktober-fesque Ale

Here is my first "original" recipe, which is a modification of EdWort's Haus Pale Ale. It's a bit Oktoberfest-ish, but not exactly. I love Ocktoberfests, but I was going for something a shade lighter, and wanted to see what Cascades do aroma-wise. What do you guys think? I bought the...

You know you're a home brewer when?

    1) When your coffee maker says "ready to brew" and you think "yes, yes i am..." 2) When you try to convice your 3 year old to name her stuffed otter "Maris"

    Another from Katy, TX

I just got started at this, and have my second batch in the fermenter right now. I appreciate the knowledge that is available here, and look forward to doing this for a long time.

    Hello from Katy TX

Did I meet you yesterday at the CIA meeting? There are about 125 homebrewers in Katy that meet irregularly to taste and BS, if you didn't already know that. You can find them on Facebook as the Cane Island Alers.

Help maintaining ferment temps in Florida

I use the swamp cooler with ice method in SE Texas to great effect. I have a Fermometer stuck to the fermenter, and another thermometer in my water. My water is usually kept about 15* below ambient (75-85*), and my fermenter has been steady at 2-4* above the water temp. One thing I'd add...

    Sweet Stout recipe feedback

Noted, agreed, and done. I also reduced the original LME total, switched the amber LME with pale LME, and reduced the amount of black patent. If I want higher ABV, I'll probably up the dark LME further. Thanks for the feedback so far. Bad news, the wife didn't like the Left Hand Milk...

    Sweet Stout recipe feedback

Not sure yet about the cost. I've not had the time to price everything out at the LHBS or online but will do so soon and post. Edited to add: I converted DME to LME to save $, and the total comes out to $48.55, not including priming sugar or Whirlfloc tab because I already have those. I...

    Sweet Stout recipe feedback

As my second batch is fermenting in the swamp cooler, my thoughts turn toward the future, which I think holds a sweet stout. I want something my wife will like, which means malty, not hoppy, sweet, and maybe chocolatey. I'd like this stout to be something you'd drink on a winter night in place...
