What's the "weirdest" ingredient you've used?

To be a nerd, if I may, don't esters tester like fruit and reduce fatty acids? Maybe phenolic? Sorry.

What's the "weirdest" ingredient you've used?

Seafood is where is draw a line, but only because I've never enjoyed it. But have tried quite a bit to see if anything has changed, until an allergic reaction. So no more of that. I was looking into using rosemary or spruce in place of hops for a small brew. Any recommendations?

    What to brew next?

You don't have to have bittering hops. Only if you want bitter beer.

Noob, Is this a sign that I should re pitch ?

@IslandLizard I'm still new to the game, but I have noticed a difference between proofing and pitching dry. Kicking off fermentation right away instead of within 48 hours, for one. Reaching a lower FG quicker (in my limited trials). And the experience also got me less afraid of hurting the...

1 Gal. IPA recipe critique for a newbie

I don't mean to come off as though you shouldn't use calculators. They are very helpful. What I mean is, there's a difference with those numbers depending on which calculator you're taking and your hops should give you an actual AA% so you can more accurately punch in numbers to make YOUR brew...

Noob, Is this a sign that I should re pitch ?

Then I do a proofing to help to curb worry at the start of fermentation.

    What to brew next?

I look at my AA (alpha acids) and aroma/flavor descriptions when usings hops. AA vary more than you'd think. But just because a hop is a "bittering' hop doesn't mean you have to drop it at 60. If you don't want a bitter beer, drop it at 15-flameout. If you are only interested in the flavor...

Dry hopping cider with Saaz hop Pellets

Not I. But please let me know how this turns out.

    What to brew next?

I would say to play with the hop combinations. Combinations and timing are going to play with flavor, aroma and bitterness. You can build a lot of complexity with just a few hop additions. Which of the hops is your favorite so far? What did you like and what were your additions? Cascade and...

1 Gal. IPA recipe critique for a newbie

I'm new also, but most research I've done says that hop additions between 50-15 minutes don't change much. So buttering should be around 50-60, and going towards aroma should be <15. Hops are flameout/whirlpool will still give bitterness. I've also learned to check my AA (alpha acids) listed on...

Noob, Is this a sign that I should re pitch ?

The one thing that helped me to fight the fear of a stalled fermentation... Yeast starter. I pitch my yeast into boiled, then cooled water. After about 15 minutes, I will add wort and let it sit for about another 15-30 minutes. You see the krausen start to form and the yeast come to life. It's...

Is general consensus now to NOT use a secondary?

I am a fan of doing split brews. I rack and bottle half, then will fruit or whatever to the other half and let it ferment/age a little longer. That could be a good use for those carboys if you get into experimenting at all? I make a base beer then do something "weird" to the other half. I am...

    Make IPA Clear Again

Bittering? Or like not doing a proper diacetyl rest? Partly joking, partly curious. Experiments. Lots of hazy boys are described as tasting like cake batter, fruity and something like cobbler. I could see diacetyl not being the worst thing if curbed and embraced.

What to brew - Looking for ideas

A slightly tart session IPA sounds like a good plan to me. Just in time for some warm weather.

    Do Bittering Hops Even Matter?

Brülosophy has probably done an experiment (or exBEERiment) if you can think of it. He mentioned on a recent episode of his podcast putting different hops in at different points in the boil to see if they could be identified by flavor. Also, aren't there hops that are known for being very clean...

@pdxal Thanks. I love this new hobby. I can finally nerd out about something again. Keep us all posted. Get experimenting.

What's the "weirdest" ingredient you've used?

Damn. There's some good ideas in this thread. I grew up in a family with a grandfather from the depression era, so I hate to see anything go to waste. That's where my idea are now while figuring out the art of the Brew. I am still asking my wife why she threw away freezer burned mixed berries...
