What did I cook this weekend.....

We made big taco salads last night for Cinco de Mayo and had a shot of Centenario Añejo tequila to celebrate. No pics, sorry! :)

What did I cook this weekend.....

Oh that sounds wonderful and easy enough to make keto-style. Thank you! Sometimes Sam's Club here takes the leftover rotisserie chickens and quarters them, then sells 4 quarters, either breast/wing or leg/thigh, in a tray for $3.99. Where the heck else could you get four BIG chicken breasts...

What did I cook this weekend.....

@YeastFeast will you share your recipe? I have some chickpea "rice" - garlic and olive oil flavor - that I might like to try with that!

What did I cook this weekend.....

Oooo, Merry, sorry about your back. That's miserable I'm sure. Been there too but knock on wood it has been YEARS since I've had a back issue.... OK hope I didn't jinx myself on that one....

What did I cook this weekend.....

That's a familiar-looking Weber gas grill! We bought ours in 2009 and it's never missed a beat. It's seen plenty of use over the years too and survived 4 moves, so far!

What did I cook this weekend.....

Yeah, we liked the old crew but the new crew has really grown on us and the quality of the video editing has definitely improved! Our dentist told KOTC to quit eating "regular" jerky because it was really wearing on his molars and TMJ - so we started making this ground beef stuff. Easier to...

What did I cook this weekend.....

You need to watch Matt's OffRoad Recovery on YouTube! They occasionally stick their lunch on the exhaust manifold.... Harvested 3.28 pounds of jerky from 6 pounds of 93/7 ground beef. Filled 2 half gallon jars and 1 quart jar, all vacuum-sealed now and good til it gets opened. AND so...

What did I cook this weekend.....

Wow Merry, that meal looks a little iron-heavy to me!😆

What did I cook this weekend.....

Not my picture, because I never remember to take one, but looked pretty much like this except I used Red Argentinian shrimp so no tails. Cast iron shrimp scampi with Banza chickpea cavatappi pasta. It was good but I needed to cook the sauce down further - it didn't want to stick to the pasta...

What did I cook this weekend.....

Those look great, Corky. I like that larger size.

What did I cook this weekend.....

Asparagus seems to be de rigueur for most Easter menus! We had it too, air-fried with a balsamic/EVOO vinaigrette, flanked by rack of lamb cut into chops and we split a sweet potato with plenty of butter between the two of us. And a lovely glass of Hans Fahden Cabernet. As usua I didn't...

What did I cook this weekend.....

    Thank you! Looks wonderful.

What did I cook this weekend.....

The older I get, the more I love my solitude! KOTC and I moved 7 years ago to a state we had never lived in, knew no one - people were appalled! But we have loved every minute of it. I say, do what works for YOU. Food included, of course....

What did I cook this weekend.....

@TwistedGray, longtime, season 1 viewers of Forged in Fire here too! I hope they keep making it. @Oldskewl that sounds and looks delicious. I have a bunch of cod in the freezer - would you share the recipe? Purty please?

What did I cook this weekend.....

Butter and cream don't scare me at all! Soy oil, canola oil, etc., now those scare me.... :)

What did I cook this weekend.....

We went to two markets and there was none - went to Walmart and they had lots! It's a brand I've had before, Blarney Stone, so I bought four of them and stuffed them in the freezer. KOTC can't wait to make some pastrami! Of course I could buy a hunk of beef and corn my own... But... yeah...
